Many years have past since those smoky days and now I find that I'm back at it again. Smoking meat that is Sadly my old copy of this book did not withstand the rigors of time You get recipes for different kinds of brines, seasonings, basting techniques and just about anything else you'll need to know for smoking.
You can't beat the detailed in depth instructions on how to smoke and cure just about anything. I'm glad to see that after all those years this book is still right on top, this speaks volumes of how good a book it really is. Was a gift for my husband buddy at work, my husband needs a new copy for himself he has used it so much. The greatest smoking book you will ever buy.
Takes time to prepare all the steps but you will never get better smoked meats and fish period!

This book is a little bit dated. It was first published in and does not appear to have ever been updated. Probably the most telling thing was that they included MSG in some of his recipes. MSG is out of favor now.

This book is written for someone who wants to smoke their food for immediate consumption. They did not have in mind smoking as a way to preserve meat. That was really my leaning and so I was a little disappointed about this. They did have a couple whole muscle jerky recipes but not a ground jerky recipe. I liked the section on home made smoking equipment.
